Did I tell you about how I went apple-picking, got 20 pounds of apples, got them home and realized oh fuck, I don't even really like apples all that much? And it only takes three whole apples to make an apple crisp, maybe five for a pie? I'm going to be eating these bloody things forever.

At least the roomies are more than willing to eat my baked creations. A. told me how much more she liked the latest pie crust than the one before, and I tried not to visibly wince, as the one she liked was store-bought and the previous one was made from scratch. Ah well. Maybe I'll unearth the Cook's Illustrated pie-crust-using-vodka-cause-CI-loves-to-fuck-with-their-readers recipe before Thanksgiving.

Also am panicking a little, realizing that I'm going to be working on Thanksgiving. Until two. So how the hell am I supposed to cook and host the meal?

Make a ton of applesauce and freeze it, then use it for applesauce cake. (I have a good recipe but I am very tired right now so too lazy to look it up.)

Use apple cider instead of water for your applesauce, and no sugar added, it will be super great.

OOooh! That sounds practical. I was going to suggest mini-dumplings. Cut the apple into quarters, pull out the innards we don't like. Nuke a bit in the micro to soften, then place on crust, add dollop of caramel and some walnuts, wrap and bake until browned lightly. I used a can of condensed milk, about a cup of brown sugar, and a tablespoon or two of buttertype substance to make the caramel. For the crust (from my July 4th 2008 post, because I'm not so handy with the links):

You will need:
2 Cups Flour
1.5 tsp salt
5 T cold water
.5 Cups oil

bowl
fork
rolling pin
2 sheets wax paper

Mix dry ingredients, add wet all at once, mix with fork to make dough.
Roll between wax paper to flatten. Half of dough rolled on 12" paper will cover a 8-9" pan.

Try adding a bit of sugar or spice to the dough too.
