Also, consider putting any excess veggie in casseroles (and freezing them so they can be reheated in the microwave on days too hot to cook).

Basic casserole formula (modify as desired): butter/grease baking dish. 1st layer: potato or sweet potato or other solid (dense) veggie; 2nd layer: green veggie OR leftover shredded chicken/meat OR diced fish (uncooked -- smallish pieces); if second level is protein, then make 3rd level veggie of any kind, cut up small (for these purposes, parsley is a half-layer); add gravy or leftover tomato sauce or other sauce anywhere after second layer; top layer: sliced mushrooms and/or cheese and/or buttered breadcrumbs and/or crumbled crackers, etc. Add whatever spices you want in various layers, just make sure that all the flavors will go together. Bake at 300 F for an hour. The idea is to let the bottom layer approximate a crust for the rest, but everything will mix when it's served.
